Vegetarian Frittata with Macaroni and Cheese
Ingredients
- 140g dry macaroni
- Chicken style stock powder
- Vivera chicken style pieces
- 8 Laughing Cow extra light cheese triangles
- Spinach
- Edamames
- Chili flakes
- Spring onions
- 6 eggs
- Grated mozzarella
Preparation
Cook the macaroni in chicken style stock powder and leave a little pasta water in the pan.
Add the chicken style pieces, cheese triangles, spinach, edamames, chili flakes, and spring onions to the pan.
Combine until the cheese triangles are incorporated.
Add the 6 beaten eggs and mix well.
Bake the mixture at 200°C for 25 minutes.
Sprinkle with grated mozzarella and bake for an additional 10 minutes.

This frittata can be prepared in advance for multiple servings.
