Vegetarian Chick'n and Broccoli Pasta Bake

Ingredients

  • Mezzi rigatoni (Sainsbury's taste the difference)
  • Roast tenderstrips (@tasteandglory_uk)
  • Veggie chicken stock
  • 5 extra light cheese triangles (@thelaughingcow_uk)
  • 15g grated mozzarella (@sainsburys)
  • Tender stem broccoli
  • Sliced Brussel sprouts
  • Tarragon
  • Garlic powder
  • Onion salt
  • Chilli flakes
  • Southern fried breadcrumbs
  • Rapeseed oil

Preparation

  1. Shred the tenderstrips and cook with the pasta in veggie chicken stock for 12 minutes

  2. Add the cheese triangles and stir through

  3. Incorporate the mozzarella, tender stem broccoli, sliced Brussel sprouts, tarragon, garlic powder, onion salt, and chilli flakes

  4. Transfer the mixture to a skillet

  5. Sprinkle half with Southern fried breadcrumbs, spray with rapeseed oil, and bake for 12 minutes
