Vegetarian Cheeseburger Lasagne Bake

Ingredients

  • 2 Beyond Meat burgers
  • 2 rice lasagne sheets
  • Tomato sauce
  • A couple of light cheese slices
  • Grated mozzarella
  • Sesame seeds

Cheese sauce

  • 250ml boiling water
  • 6 Laughing Cow extra light cheese triangles
  • Garlic powder
  • Onion salt
  • Smokey bacon seasoning
  • 1 tablespoon cornflour

Preparation

  1. Cut the Beyond Meat burgers in halves and shape into 4 rectangular patties.

  2. Brown the patties on both sides and set aside.

  3. Soften the rice lasagne sheets in a pan of boiling water.

  4. In a saucepan, combine 250ml boiling water and 6 cheese triangles; stir until melted and starting to thicken.

  5. Add garlic powder, onion salt, and smokey bacon seasoning.

  6. Mix 1 tablespoon cornflour with a little cold water and add to the cheese mixture; stir until bubbling.

  7. In the bottom of a small loaf tin, add tomato sauce.

  8. Layer with a couple of light cheese slices, 2 burger patties, lasagne sheets, and cheese sauce, finishing with cheese sauce.

  9. Bake for 15 minutes.

  10. Top with grated mozzarella and bake for another 8 minutes.

  11. Sprinkle with sesame seeds.

Notes

  1. This recipe makes 2 servings and can be served with salad on the side for a complete meal.
