Messy Vegetarian Pastitsio Bake

Ingredients

  • 150g Napolina macaroni
  • Morrisons meat free mince
  • Water
  • 3/4 tube tomato puree
  • Knorr vegetable stock pot
  • Smoked paprika (to taste)
  • Garlic powder (to taste)
  • Onion salt (to taste)
  • Cinnamon (to taste)
  • Sweetener (to taste)
  • 250ml water (for cheese sauce)
  • 6 Laughing Cow extra light cheese triangles
  • Mustard (to taste)
  • 1 tablespoon cornflour
  • Grated mozzarella (for topping)
  • Finely grated Italian hard cheese

Preparation

  1. Boil the macaroni until tender.

  2. Coat the pasta in finely grated Italian hard cheese and season.

  3. Line the bottom of a 1-pound loaf tin with the cheesy pasta in three layers all in the same direction.

  4. Prepare the mince mixture by combining meat-free mince with water, 3/4 tube of tomato puree, Knorr vegetable stock pot, smoked paprika, garlic powder, onion salt, cinnamon, and sweetener to taste.

  5. Add a layer of the mince mixture on top of the pasta.

  6. Add another layer of pasta.

  7. Prepare the cheese sauce by mixing 250ml water with 6 Laughing Cow extra light cheese triangles, garlic powder, onion salt, mustard, and cornflour mixed with a little cold water.

  8. Pour the cheese sauce over the layers.

  9. Bake for 10 minutes.

  10. Top with grated mozzarella and bake for another 10 minutes.

  11. Allow to cool slightly before serving with salad.

Tips

  1. This is a messy version of pastitsio; for easier preparation, consider making a bolognese or lasagne instead.
