Serikandi Agar Bread Pudding

Ingredients

  • 2 packets agar-agar strips (20g each)
  • 2 tins evaporated milk
  • 1 tin condensed milk
  • 1 short Gardenia sliced bread loaf
  • 1 inch rock sugar
  • Red, green, yellow food coloring

Preparation

  1. Cook the agar-agar strips with 2.4 liters of water (or as needed) until boiling and dissolved.

  2. Add the rock sugar and stir until fully dissolved.

  3. Tear the sliced bread into pieces and soak in the evaporated milk until it expands and is fully submerged, using only the white part and discarding the crust.

  4. Once the agar mixture is boiling and smooth, scoop small amounts into three separate containers, add red, yellow, and green food coloring to each, and allow them to cool and set.

  5. Reduce the heat to low, add the condensed milk to the remaining agar mixture in the pot, and stir until well combined, adjusting sweetness to taste.

  6. Let the mixture simmer on low heat.

  7. Once the colored agar portions have set, cut them into small cubes.

  8. In a tray, create layers by first sprinkling the colorful cubes, then adding the bread soaked in evaporated milk, and pouring the agar-milk mixture little by little to ensure the bread sinks, repeating this layering process until all ingredients are used.

  9. Cool the pudding slightly, then refrigerate and serve.
