Dragon Fruit Agar Pudding

Ingredients

  • 20g agar-agar strips
  • 5 cups water
  • 1 cup sugar
  • A little rock sugar
  • 1 can evaporated milk
  • 1 tablespoon condensed milk
  • 1 dragon fruit
  • A pinch of salt

Preparation

  1. Cut the dragon fruit into cubes and leave about a quarter of it

  2. Scatter the cubed dragon fruit in a tray

  3. Cook the agar-agar with water until it dissolves

  4. Add sugar and rock sugar, stir until even

  5. Add a pinch of salt, stir well, and cook until boiling

  6. Take about 2 cups of the mixture and pour it slowly over the dragon fruit, let it semi-set

  7. Reheat the remaining agar mixture, add condensed milk, evaporated milk, and the remaining quarter dragon fruit blended with a little evaporated milk

  8. Stir until well mixed

  9. Cook until boiling

  10. Strain and pour slowly over the first pudding layer, let it set

  11. Let it harden and cool in the refrigerator

  12. Cut as desired
