Malaysian Serikandi Bread Pudding

Ingredients

  • 2 packets agar-agar strings (20g each)
  • 2 tins evaporated milk
  • 1 tin condensed milk
  • 1 short Gardenia sliced bread
  • 1 inch rock sugar
  • red, green, and yellow food coloring

Preparation

  1. Cook the agar-agar with 1.2 liters of water times two or as needed

  2. Add the rock sugar

  3. Tear the bread into the evaporated milk to soak and expand, using only the white part and discarding the crust

  4. Once the agar-agar boils and dissolves, scoop it into three containers to make red, yellow, and green colors, then cool, using about 2 to 3 ladles per container

  5. Reduce heat and add the condensed milk, stir until well mixed, and adjust sweetness to taste

  6. Keep on low heat

  7. Once the three colored mixtures are set, cut them into cubes

  8. Layer in a pan by first sprinkling the colored cubes, add the bread soaked in evaporated milk, and pour the agar-agar mixture little by little to submerge the bread, repeating the process until everything is used

  9. Cool slightly, refrigerate, and serve
