Spiced Besan Flour Flatbreads

Ingredients

  • 1 cup gram flour
  • 1/2 cup whole wheat flour (or GF oat flour)
  • 4 Tbsp fresh coriander finely chopped
  • 1 large green chilli finely chopped (optional)
  • 1 1/2 tsp ground cumin
  • Pinch of salt
  • 1/2 cup water (plus 2-3 Tbs)

Preparation

  1. Add all the ingredients to a food processor with dough attachment and pulse to form a smooth and pliable dough

  2. If the dough is too sticky, add a bit more flour

  3. If it is too dry and crumbly, slowly add more water and continue pulsing

  4. Turn onto a floured surface and divide into 8 round balls

  5. Using a rolling pin, roll them into disc shape as thin as possible

  6. Heat a nonstick pan on high heat for 2 minutes and then reduce to medium

  7. Place one of the rolled breads in the pan and cook on each side for about 1 minute until golden with small bubbles starting to form

  8. Now take the flatbread in a pair of tongs and place over a direct flame

  9. Keep turning until it fluffs up
