Spiced Date & Lentil Curry Delight

Ingredients

  • 10 minced California Dates
  • 2 cups lentils, soaked for 15 minutes in 400ml of coconut milk
  • 1 tbsp fresh ginger, peeled and chopped
  • 2 tbsp curry powder
  • 2 tsp ground cumin
  • 2 tsp ground turmeric
  • 2 tsp garam masala
  • 4 chilies, stemmed and seeded
  • 3 large onions, thinly sliced
  • 5 garlic cloves
  • 1 cup beer
  • 1/2 tsp coconut sugar
  • 1 can diced tomatoes
  • Kosher salt
  • Olive oil

Preparation

  1. Rinse and drain lentils, then add them to a slow cooker.

  2. In a food processor or blender, combine the minced dates, garam masala, turmeric, cumin, curry powder, ginger, garlic, 1 onion, and serrano chilies. Blend until the mixture becomes a paste.

  3. Add the mixture from step 2 into the slow cooker with the lentils. Stir in diced tomatoes and 6 cups of water. Cover the slow cooker and cook on low for 8 hours.

  4. Season the curry with salt and add coconut milk, then stir well.

  5. When the curry is approximately half an hour away from being cooked, heat olive oil in a pan. Add two of the thinly sliced onions, minced dates, and beer to the pan. Cook on medium heat for about 20 minutes, stirring occasionally, until the beer has completely reduced.

  6. To serve, assemble the curry and your favorite rice in a bowl. Top with the caramelized onions and dates.
