Vegan Slow-Cooker Spiced Cauliflower & Squash Curry

Ingredients

  • 1 large head of cauliflower or one bag of frozen cauliflower florets
  • 1 squash cut into cubes or one bag of frozen cubed squash
  • 1 cup sliced cherry tomatoes
  • 1 yellow onion sliced
  • 6 minced garlic cloves
  • 1 minced serrano chili
  • 1 tbsp garam masala
  • 1 tbsp chili powder
  • 1.5 tbsp ground cumin
  • 2 tbsp sea salt
  • 1 tbsp turmeric powder
  • 1 can coconut milk
  • 1 can coconut cream
  • 3 tbsp olive oil or any vegetable oil
  • 1/2 cup parsley or cilantro

Preparation

  1. Add all ingredients to slow cooker.

  2. Cook on low for 3 hours, or 4 hours for more softened vegetables.

  3. Serve with your favorite rice or naan.
