Vegan Slow-Cooker Spiced Cauliflower & Squash Curry
Ingredients
- 1 large head of cauliflower or one bag of frozen cauliflower florets
- 1 squash cut into cubes or one bag of frozen cubed squash
- 1 cup sliced cherry tomatoes
- 1 yellow onion sliced
- 6 minced garlic cloves
- 1 minced serrano chili
- 1 tbsp garam masala
- 1 tbsp chili powder
- 1.5 tbsp ground cumin
- 2 tbsp sea salt
- 1 tbsp turmeric powder
- 1 can coconut milk
- 1 can coconut cream
- 3 tbsp olive oil or any vegetable oil
- 1/2 cup parsley or cilantro
Preparation
Add all ingredients to slow cooker.
Cook on low for 3 hours, or 4 hours for more softened vegetables.
Serve with your favorite rice or naan.
