Stuffed Green Pea Naan with Tamarind Chutney
Ingredients
- 1 cup flour (mix of plain flour and wheat flour)
- 1 teaspoon sugar
- 1/2 teaspoon baking powder
- 2 teaspoons oil
- 1/2 cup curd
- a little water
Stuffing
- 1.5 cups green peas (coarsely ground)
- 1 teaspoon oil
- 1 teaspoon cumin seeds
- a pinch of asafoetida
- 1 spoon crushed ginger, garlic and green chillies
- 1 finely chopped onion
- salt as per taste
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- red chilli powder as per taste
- garam masala as per taste
- lemon juice (drizzle some)
- coriander leaves
Chutney
- approximately 100 grams tamarind pulp (diluted with water)
- chaat masala
- roasted cumin powder
- jaggery
- salt as per taste
- finely chopped onion
- finely chopped green chillies
- coriander
Preparation
In a mixing bowl, take 1 cup flour, add 1 teaspoon sugar, 1/2 teaspoon baking powder, 2 teaspoons oil, 1/2 cup curd
Add a little water and knead a soft dough
Apply oil on the dough
Cover the bowl and rest the dough
Stuffing
In a mixer jar, coarsely grind 1.5 cups green peas
Add 1 teaspoon oil in a pan, add 1 teaspoon cumin seeds, a pinch of asafoetida, 1 spoon crushed ginger, garlic and green chillies
Add 1 finely chopped onion, salt as per taste, 1/2 teaspoon turmeric powder
Add 1 teaspoon coriander powder, red chilli powder as per taste and garam masala as per taste
Fry the masala well and add crushed green peas
Mix everything and cook for 5 minutes
Turn off the heat and drizzle some lemon juice and coriander leaves
Let the mixture cool down
Assembly
Take out a small dough ball
Add stuffing in the middle and cover with sides
Gently flatten it with hands
Add some onion seeds and coriander leaves on it
Apply a little water on flat side of naan
Place this side down in the pan
Gently spread the naan
Cook it on slow to medium flame
Flip the pan when the naan puffs up
Let the other side roast on direct flame
Take out the naan from pan and apply butter
Chutney
Take approximately 100 grams tamarind pulp diluted with water
Add chaat masala
Add roasted cumin powder
Add jaggery
Add salt as per taste
Add finely chopped onion, green chillies and coriander
Mix everything well
