Sweet Potato Chocolate Pudding

Ingredients

  • soft flesh of 1 small roasted sweet potato
  • 2 tablespoons chia seeds
  • 1/4 cup almond milk
  • 1 tablespoon cacao
  • 1 tablespoon almond butter
  • 1 tablespoon coconut butter

Preparation

  1. Soak 2 tablespoons of chia seeds in 1/4 cup of almond milk for 5 minutes.

  2. Combine the soaked chia seeds mixture with the soft flesh of 1 small roasted sweet potato, 1 tablespoon of cacao, 1 tablespoon of almond butter, and 1 tablespoon of coconut butter in a blender.

  3. Blend until smooth and creamy.

  4. Cover with additional almond butter and other desired toppings to serve.

Health notes

  1. Chia seeds are a staple in my diet and I aim for at least 2-4 tablespoons per day in various dishes.

  2. They support digestion, hormone health, mental wellbeing, and are a good source of calcium, which is important in a dairy-free diet.
