Sweet Potato Fries with Beet Ketchup

Ingredients

Sweet potato fries

  • Japanese sweet potatoes
  • regular sweet potatoes
  • salt
  • pepper
  • paprika

Beet ketchup

  • 2 large beets
  • 1/2 cup apple cider vinegar
  • 14 pitted dates
  • 1/4 tsp ground clove
  • 1/2 tsp fresh ginger
  • 1/2 tsp onion powder
  • 1 clove garlic
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • pinch of red pepper flakes

Preparation

  1. Preheat the oven to 200°C

  2. Peel and cube the beets

  3. Roast the cubed beets for 30-40 minutes until tender

  4. Toast the garlic clove in a dry skillet until fragrant

  5. Cut the sweet potatoes into fry-shaped pieces

  6. Toss the sweet potato pieces with salt, pepper, and paprika.

  7. Combine the roasted beets, toasted garlic, apple cider vinegar, pitted dates, ground clove, fresh ginger, onion powder, salt, pepper, and red pepper flakes in a blender and blend until smooth

  8. Spread the seasoned sweet potato fries on a baking sheet and bake for 20-25 minutes, flipping halfway, until golden and crispy
