Sweetcorn, Courgette and Pea Fritters

Ingredients

  • 1 small/medium grated courgette
  • 1 grated carrot
  • sweetcorn, boiled and off the cob
  • frozen peas, boiled for 1 minute
  • mashed cauliflower and broccoli, pre-cooked
  • 1/2 cup wholemeal spelt flour or other flour
  • 1 flax egg (1 tablespoon flax and 1 tablespoon water)
  • salt and pepper

Preparation

  1. Mix all the ingredients together, roll into balls and slightly flatten.

  2. Sauté in a nonstick pan until golden on both sides.

  3. Serve with spicy buffalo sauce yogurt dip, sweet potato tofu cheese sauce, rocket salad mix, and ketchup as desired.
