Turkish Eggs with Herbed Yogurt
Ingredients
- 250 g low-fat yogurt
- 15 g finely chopped dill
- 1 clove crushed garlic
- pepper
- 4 eggs
- 2 tbsp oil
- chili flakes
Preparation
Mix the yogurt, dill, garlic and pepper together.
Bring a pan of water to the boil.
Crack an egg into a bowl, stir the water in a circle to create a whirlpool, gently slide the egg into the center of the simmering water vortex, and poach for 3-4 minutes for a soft-boiled egg or 4-5 minutes for a firmer egg.
Heat the oil in another pan and briefly fry the chili flakes.
Spread the yogurt over the plates, place the poached eggs on top, garnish with the chili oil and extra dill, and serve with your favorite bread.
Notes
This dish is also known as çilibir and is a high-protein savory breakfast option.
