Vegan Coconut Porridge with Banana Toppings
Ingredients
- 40g Tesco food oats
- 100ml water
- 70ml coconut milk
- 1 tbsp chia seeds
- 1 tbsp agave syrup
- 1/2 smashed banana
Toppings
- 1/2 banana
- 1 tbsp Alpro coconut yogurt
- cacao nibs
- 1 tsp almond butter
Preparation
Combine oats, water, coconut milk, chia seeds, agave syrup, and smashed banana in a pot
Cook over medium heat, stirring occasionally, until the mixture thickens and oats are soft, about 5-10 minutes
Remove from heat and let it cool slightly if desired
Add the toppings: sliced banana, coconut yogurt, cacao nibs, and almond butter
