Vegan Madras Soya Chunk Masala Curry

Ingredients

  • 1.5 cups soya chunks
  • 1 onion
  • 1 cup tinned tomatoes
  • 1 inch ginger
  • 1 mustard seed
  • 2 teaspoons urid dal
  • 1 dried red chilli
  • 2 teaspoons turmeric
  • 1 teaspoon ginger powder
  • 2 teaspoons chilli powder
  • 0.5 tablespoon coriander powder
  • 0.5-1 tablespoon roasted curry powder
  • 2 tablespoons coconut cream
  • 0.5 tablespoon xylitol or sugar
  • 0.5 cup water
  • 4 tablespoons oil
  • Salt to taste

Preparation

  1. Marinate cooked soya chunks with 1 teaspoon turmeric, 1 teaspoon ginger powder, 2 teaspoons chilli powder, 0.5 tablespoon coriander powder and salt

  2. Heat 3 tablespoons oil in a wok. Stir fry soya chunks for a few minutes and set aside

  3. Heat 1 tablespoon oil in a pan and add mustard seeds, urid dal and dried red chilli

  4. When mustard seeds splutter, add ginger and onions

  5. When onions begin to brown, add tomatoes, sugar, 1 teaspoon turmeric and curry powder

  6. Cook for a few minutes and add coconut cream, water and soya chunks. Season with salt as desired
