Vegan Sweet Potato Brownies

Ingredients

  • 400g sweet potato
  • 140g dark chocolate
  • 80g coconut oil
  • 100g self-raising flour
  • 160g sugar
  • Pinch of salt

Preparation

  1. Preheat oven to 180°C

  2. Cook sweet potato until soft, either by boiling or roasting

  3. Melt dark chocolate and coconut oil together in a heatproof bowl

  4. Mash the cooked sweet potato until smooth

  5. In a separate bowl, mix self-raising flour, sugar, and salt

  6. Combine the mashed sweet potato with the melted chocolate mixture, then add the dry ingredients and mix well

  7. Pour the batter into a greased baking tin and bake for 20-25 minutes or until a toothpick comes out clean
