Vegan Sweet Potato Brownies
Ingredients
- 400g sweet potato
- 140g dark chocolate
- 80g coconut oil
- 100g self-raising flour
- 160g sugar
- Pinch of salt
Preparation
Preheat oven to 180°C
Cook sweet potato until soft, then mash it
Melt dark chocolate and coconut oil together
Mix all ingredients together to form a batter
Pour batter into a greased baking tin and bake for 20-25 minutes or until a toothpick comes out clean
