Vegan Sweet Potato Brownies

Ingredients

  • 400g sweet potato
  • 140g dark chocolate
  • 80g coconut oil
  • 100g self-raising flour
  • 160g sugar
  • Pinch of salt

Preparation

  1. Preheat oven to 180°C

  2. Cook sweet potato until soft, then mash it

  3. Melt dark chocolate and coconut oil together

  4. Mix all ingredients together to form a batter

  5. Pour batter into a greased baking tin and bake for 20-25 minutes or until a toothpick comes out clean
