Zucchini Egg Toasts

Ingredients

  • 1 small zucchini
  • 1 egg
  • pinch of salt
  • 1 slice whole grain bread
  • 1 tablespoon dried dill (or fresh)
  • 1 tablespoon olive oil

Preparation

  1. Grate the zucchini and mix it with salt in a bowl. Let it sit for 5-10 minutes.

  2. Strain the water from the zucchini using your hands.

  3. Heat a pan with olive oil and form the zucchini into a pancake shape.

  4. Make a small hole in the center and crack the egg into it.

  5. Add a little salt and dried dill, then cook on medium heat until golden around the edges.

  6. Meanwhile, toast the bread.

  7. Once cooked, place the zucchini egg on top of the toast and serve.
