Arab Flatbread with Sesame Topping
Ingredients
Dough
- 3 cups flour
- 1 tablespoon instant yeast
- 1 teaspoon salt
- 1/2 teaspoon baking powder
- 3 tablespoons sugar
- 1 cup warm milk
- 1/4 cup corn oil
Toppings
- Sesame seeds
- Nigella seeds
Preparation
In the mixer bowl, place 1/2 cup flour, add the yeast, salt, baking powder, sugar, and warm milk, attach the dough hook and mix on low speed until a soft dough forms, cover and let it rest in the bowl for 20 minutes
Add the oil and 2 cups of flour, knead until you have a light and elastic dough, adding more flour as needed
Place the dough in a greased bowl, brush the surface with a little oil, cover and let it rise for half an hour in a warm place or until doubled in size
Divide the dough into 8 equal pieces, shape them into balls and let them rest for a few minutes
Place sesame and nigella seeds in a wide plate
Dip the surface of each ball into the seeds
Roll out each ball with a rolling pin into a thin flatbread, place on a cotton towel without stacking, cover with a cotton towel and let rise until doubled in size
Heat a griddle or large skillet, place the flatbread for a few seconds, flip and wait until it puffs and browns, continue flipping on both sides until puffed and cooked, serve hot
