Arab Flatbread with Sesame Topping

Ingredients

Dough

  • 3 cups flour
  • 1 tablespoon instant yeast
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 3 tablespoons sugar
  • 1 cup warm milk
  • 1/4 cup corn oil

Toppings

  • Sesame seeds
  • Nigella seeds

Preparation

  1. In the mixer bowl, place 1/2 cup flour, add the yeast, salt, baking powder, sugar, and warm milk, attach the dough hook and mix on low speed until a soft dough forms, cover and let it rest in the bowl for 20 minutes

  2. Add the oil and 2 cups of flour, knead until you have a light and elastic dough, adding more flour as needed

  3. Place the dough in a greased bowl, brush the surface with a little oil, cover and let it rise for half an hour in a warm place or until doubled in size

  4. Divide the dough into 8 equal pieces, shape them into balls and let them rest for a few minutes

  5. Place sesame and nigella seeds in a wide plate

  6. Dip the surface of each ball into the seeds

  7. Roll out each ball with a rolling pin into a thin flatbread, place on a cotton towel without stacking, cover with a cotton towel and let rise until doubled in size

  8. Heat a griddle or large skillet, place the flatbread for a few seconds, flip and wait until it puffs and browns, continue flipping on both sides until puffed and cooked, serve hot
