Arabic Pita Bread
Ingredients
Dough
- 3 cups flour
- 1 tablespoon instant yeast
- 1 teaspoon salt
- 1/2 teaspoon baking powder
- 3 tablespoons sugar
- 1 cup very warm milk
- 1/4 cup corn oil
For serving
- Sesame seeds
- Nigella seeds
Preparation
In the mixer bowl, place 2 cups flour, add the yeast, salt, baking powder, sugar, and milk. Attach the dough hook, mix on low speed until a soft dough forms, cover it and let it rest in the bowl for 20 minutes.
Add the oil and 2 cups of flour, knead until you have a light and elastic dough, adding the remaining flour as needed.
Place the dough in a greased bowl, brush the surface with a little oil. Cover it and let it rise for half an hour in a warm place or until doubled in size.
Divide the dough into 8 equal pieces, shape them into balls, let them rest for a few minutes.
Place sesame and nigella seeds in a wide plate.
Dip the surface of the ball into the sesame and nigella seeds.
Roll out the ball with a rolling pin into a thin loaf, place it on a cotton towel, continue rolling the remaining balls. Do not stack them. Cover the loaves with a cotton towel and let them double in size.
Heat a griddle or large skillet, place the loaf for a few seconds then flip it and wait until it puffs and browns, continue flipping on both sides until it puffs and cooks. Serve hot.
