Crunchy Apple Cupcakes

Ingredients

  • 2 cups flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons starch
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup fine granulated sugar
  • 1/2 cup corn oil
  • 1/4 cup water

Apple mixture

  • 2 apples
  • 1 tablespoon cinnamon

For serving

  • Sweetened condensed milk

Preparation

  1. Set the middle rack in the oven and preheat to 180°C.

  2. Use cupcake molds and place cupcake liners in them.

  3. Grate the apples using a vegetable grater, add cinnamon, and set aside.

  4. In a deep bowl, sift the flour, baking powder, salt, and starch, and set aside.

  5. In a blender pitcher, place the eggs, oil, sugar, water, and vanilla, and blend until smooth.

  6. Pour the mixture over the flour and mix with a plastic spoon until combined.

  7. Distribute the cake batter into the molds.

  8. Spread the grated apple over the cake batter.

  9. Bake the cupcakes for 20 to 25 minutes until done.

  10. Immediately after removing from the oven, spread a little sweetened condensed milk on top or serve as is.
