Easy Baked Almond Fingers Cookies
Ingredients
Dough
- 1 cup whole almonds
- 2 1/4 cups flour
- 1 cup soft butter
- 1 teaspoon vanilla extract
For covering
- Powdered sugar
Preparation
Preheat oven to 160°C and line shallow baking trays with parchment paper.
For the dough, in a food processor grind the almonds finely, then add flour, butter, and vanilla, and mix on low speed until a smooth dough forms.
Take a tablespoon of dough and shape it into finger shapes.
Place the almond fingers on the tray, spaced apart.
Bake for 15-20 minutes until very light golden, do not overbake or let the bottom become dark, and let cool slightly.
Coat the almond fingers in powdered sugar, let cool completely, and serve.
