Easy Baked Almond Fingers Cookies

Ingredients

Dough

  • 1 cup whole almonds
  • 2 1/4 cups flour
  • 1 cup soft butter
  • 1 teaspoon vanilla extract

For covering

  • Powdered sugar

Preparation

  1. Preheat oven to 160°C and line shallow baking trays with parchment paper.

  2. For the dough, in a food processor grind the almonds finely, then add flour, butter, and vanilla, and mix on low speed until a smooth dough forms.

  3. Take a tablespoon of dough and shape it into finger shapes.

  4. Place the almond fingers on the tray, spaced apart.

  5. Bake for 15-20 minutes until very light golden, do not overbake or let the bottom become dark, and let cool slightly.

  6. Coat the almond fingers in powdered sugar, let cool completely, and serve.
