Layered Strawberry and Coconut Gelatin Dessert

Ingredients

Red layer

  • 1 large packet strawberry or cherry Jell-O
  • 2 cups hot water

White layer

  • 3 1/2 cups milk
  • 2 tablespoons plain gelatin
  • 1/4 cup sugar
  • 1/4 cup dried coconut milk
  • 1 teaspoon vanilla extract

Preparation

  1. Grease a rose-shaped mold or a 10-inch round pan with raised edges with a little oil.

  2. In a deep bowl, dissolve the strawberry or cherry Jell-O in hot water, stir until fully dissolved, pour into the mold, and refrigerate for about an hour until set.

  3. In a saucepan, place about 1/2 cup of milk, add the plain gelatin, heat gently until warm, let it sit for a few minutes until the gelatin dissolves completely, then add the remaining milk, sugar, dried coconut milk, and vanilla extract, and heat gently until hot.

  4. Strain the milk mixture to remove any residues, and pour it over the set Jell-O layer.

  5. Refrigerate the mold for several hours until fully set.

  6. Unmold the dessert onto a serving plate and serve to your loved ones.
