Luxury Nut Cake
Ingredients
Cake mixture
- 1/2 cup flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup ground almonds
- 1/2 cup softened butter
- 1/2 cup fine-grained sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
Nut mixture
- 6 tablespoons melted butter
- 3/4 cup light brown sugar
- 1/4 cup honey
- 1 cup sliced almonds
- 1/4 cup pine nuts
Preparation
Position the rack in the middle of the oven and preheat the oven to 180°C.
Prepare a 10-inch round cake pan.
For the nut mixture: Spread the butter in the bottom of the pan, gently swirl to coat the sides, sprinkle the brown sugar, spread the honey over it, and then spread the almonds and pine nuts.
For the cake mixture: On parchment paper or in a deep bowl, sift the flour, baking soda, and salt, add the ground almonds, and set aside.
In the mixer bowl, place the butter and sugar, attach the paddle attachment, and run the mixer on medium speed for 3 minutes until light and creamy, then add the eggs and vanilla and mix on medium speed until incorporated.
Add the flour mixture and buttermilk, and run the mixer on medium speed for one minute.
Pour the cake batter over the nut mixture.
Bake the cake for 40 minutes, then test doneness with a wooden skewer; it should come out clean.
Remove the cake from the oven, immediately invert it onto a serving plate, leave the pan on for 5 minutes, and then remove it.
Let the cake cool completely before serving.
