Crunchy Walnut Oatmeal Biscuits
Ingredients
- 2 cups flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 3 cups rolled oats
- 1 cup softened vegetable shortening
- 1 cup fine granulated sugar
- 1 cup light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts
Preparation
Sift the flour, baking soda, and salt on parchment paper or in a deep bowl, then add the oats.
In a mixer bowl, place the shortening, fine sugar, and brown sugar, attach the paddle attachment, and mix on medium speed until light and creamy.
Add the eggs and vanilla, and mix on medium speed until incorporated.
Add the flour and oat mixture, and mix on medium speed until dough forms and pulls away from the sides.
Remove the paddle, add the walnuts, and mix with a wide plastic spoon.
Shape the dough into a cylinder about 3 inches in diameter on the kitchen counter, wrap in plastic, and refrigerate overnight.
Position the rack in the middle of the oven and preheat to 180°C.
Line short-rimmed baking sheets with parchment paper.
Remove the dough from the fridge, unwrap, cut into thin circles with a sharp knife, and place on the sheets with 1 inch between each.
Bake for 8 minutes until the bottom is golden.
Remove from the oven, transfer to a wire rack using a wide metal spatula, and let cool completely before serving.
