Stuffed Peanut Butter Cookies
Ingredients
Dough
- 2 cups flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ginger powder
- 1/2 cup light brown sugar
- 1/2 cup granulated sugar
- 2/3 cup soft butter
- 2/3 cup peanut butter
- 1 large egg
- 1 teaspoon vanilla extract
Filling
- 1/4 cup soft butter
- 1/4 cup peanut butter
- 1 1/2 tablespoons milk
- 1 1/2 cups powdered sugar
Preparation
Set the oven rack in the middle and preheat the oven to 180°C
Prepare shallow baking sheets
For the dough, in a deep bowl, mix flour, salt, baking soda, cinnamon, and ginger with a fork
In a mixer bowl, combine sugar, brown sugar, butter, and peanut butter, use the paddle attachment and mix on medium speed for 3 minutes until creamy
Add egg and mix on medium speed until fully incorporated, then add vanilla
Switch to dough hook, add flour mixture and mix on medium speed for 1 minute to form smooth dough, chill the dough for an hour or shape it directly and then chill
Take dough portions the size of a walnut, shape into smooth balls, and place on baking sheet with 1 inch between them
Use a fork to lightly press and decorate the balls into discs
Bake for 10 minutes until cookies are done
Remove from oven, use a wide metal spoon to transfer to a wire rack and cool completely
For the filling, in a deep bowl, mix butter, peanut butter, milk, and powdered sugar with a wide plastic spoon until smooth cream
Spread about half a teaspoon of cream on one cookie and sandwich with another cookie, press lightly
Serve the stuffed peanut butter cookies
