Stuffed Peanut Butter Cookies

Ingredients

Dough

  • 2 cups flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ginger powder
  • 1/2 cup light brown sugar
  • 1/2 cup granulated sugar
  • 2/3 cup soft butter
  • 2/3 cup peanut butter
  • 1 large egg
  • 1 teaspoon vanilla extract

Filling

  • 1/4 cup soft butter
  • 1/4 cup peanut butter
  • 1 1/2 tablespoons milk
  • 1 1/2 cups powdered sugar

Preparation

  1. Set the oven rack in the middle and preheat the oven to 180°C

  2. Prepare shallow baking sheets

  3. For the dough, in a deep bowl, mix flour, salt, baking soda, cinnamon, and ginger with a fork

  4. In a mixer bowl, combine sugar, brown sugar, butter, and peanut butter, use the paddle attachment and mix on medium speed for 3 minutes until creamy

  5. Add egg and mix on medium speed until fully incorporated, then add vanilla

  6. Switch to dough hook, add flour mixture and mix on medium speed for 1 minute to form smooth dough, chill the dough for an hour or shape it directly and then chill

  7. Take dough portions the size of a walnut, shape into smooth balls, and place on baking sheet with 1 inch between them

  8. Use a fork to lightly press and decorate the balls into discs

  9. Bake for 10 minutes until cookies are done

  10. Remove from oven, use a wide metal spoon to transfer to a wire rack and cool completely

  11. For the filling, in a deep bowl, mix butter, peanut butter, milk, and powdered sugar with a wide plastic spoon until smooth cream

  12. Spread about half a teaspoon of cream on one cookie and sandwich with another cookie, press lightly

  13. Serve the stuffed peanut butter cookies
