Pineapple and Almond Cups

Ingredients

  • 2 cups ground plain biscuits
  • 2 teaspoons rose water
  • 1 cup soft cream cheese
  • 1 cup clotted cream or kaymak
  • 1/2 cup sugar
  • 2 cups mashed pineapple

Garnish

  • Crushed almonds

Preparation

  1. Prepare 6 transparent serving cups.

  2. In a deep bowl, place the ground biscuits and rose water, and mix well until combined.

  3. In a deep bowl, place the soft cream cheese, clotted cream, and sugar. Use a hand whisk to mix until the mixture is fluffy and creamy.

  4. Add the mashed pineapple to the cheese mixture and stir well to combine.

  5. Using a spoon, spread the biscuit mixture in the bottom of the cups. Add a layer of the cheese mixture over the biscuits. Add another layer of biscuit mixture over the cheese, and repeat the layers until all ingredients are used, ending with the cheese mixture.

  6. Refrigerate the cups for several hours or overnight.

  7. Garnish with crushed almonds and serve cold.
