Pineapple and Almond Cups

Ingredients

  • 2 cups ground plain biscuits
  • 2 teaspoons rose water
  • 1 cup soft cream cheese
  • 1 cup clotted cream
  • 1/2 cup sugar
  • 2 cups mashed pineapple

Garnish

  • Chopped almonds

Preparation

  1. Prepare 6 transparent serving cups.

  2. In a deep bowl, place the biscuits and rose water and mix well until combined.

  3. In a deep bowl, place the cream cheese, clotted cream, and sugar and use a hand whisk to mix for several minutes until light and creamy.

  4. Add the pineapple and mix well.

  5. Using a tablespoon, spread the biscuit mixture in the bottom of the cups, then spread a little of the cheese mixture over the biscuits, add a tablespoon of the biscuit mixture over the cheese mixture, and repeat with the remaining ingredients until ending with the cheese mixture.

  6. Place the cups in the refrigerator for several hours or overnight.

  7. Garnish with chopped almonds and serve cold.
