Brazilian Crazy Lady Cake with Nutella Filling

Ingredients

  • 1 cup vegetable oil
  • 1 cup hot water
  • 1 tablespoon baking powder
  • 1 1/2 cups sugar
  • 2 cups all-purpose flour
  • 1 cup cocoa powder
  • 4 eggs

Filling

  • 250 ml milk
  • 300 g Nutella
  • 2 (14-oz) cans sweetened condensed milk
  • 1 tablespoon unsalted butter
  • 3 tablespoons cornstarch
  • 1 1/2 cups cocoa powder

Preparation

Cake

  1. Mix eggs, sugar, flour, cocoa powder, and vegetable oil in a bowl

  2. Add hot water and mix well

  3. Add baking powder and mix

  4. Grease a cake pan with butter and flour

  5. Pour the batter into the pan

  6. Bake in a medium oven for 40 minutes, or until the cake is done

Filling

  1. In a large saucepan, mix cornstarch dissolved in milk, sweetened condensed milk, unsalted butter, and cocoa powder

  2. Cook over medium heat, stirring constantly, until the mixture pulls away from the bottom of the pan

  3. Remove from heat and stir in Nutella

  4. Transfer to a bowl, cover with plastic wrap touching the surface, and let cool

  5. Refrigerate for 1 hour

Assembly

  1. Once the cake is completely cooled, slice it horizontally into two layers

  2. Spread the cooled filling on the bottom layer

  3. Top with the second layer

  4. Spread any remaining filling on top
