Hearty and Comforting Spicy Potato Noodles
Ingredients
- 300g potatoes
- 80g potato starch
- 50g tapioca starch
- 3 cloves garlic
- 4 tablespoons soy sauce
- 2 tablespoons dark vinegar
- 4 tablespoons chili oil
- 2 stalks scallion
- water
Preparation
Peel and cut the potatoes into thin slices, steam for 15 minutes until they are completely cooked. Use a potato masher to mash the potatoes, add potato and tapioca starch, knead into a dough. If the dough is still sticky, add a bit more potato starch. Let the dough rest for 10 minutes.
Take a small portion of the dough and roll it so it turns into a thick noodle. Boil water, when it is boiled, add the noodles and let them cook for about 3 minutes, take them out and put them in two separate bowls.
In each bowl, add 2 tablespoons soy sauce, 1 tablespoon dark vinegar, 2 tablespoons chili oil, half the chopped garlic and scallion, mix everything and enjoy.
