Vegan Fried Rice with Tofu and Vegetables

Ingredients

  • 50g firm tofu
  • 1 carrot
  • 2 spring onions
  • Thumb size piece of ginger
  • 2 cloves of garlic
  • 1/4 cup of peas
  • 1/2 teaspoon Chinese five spice
  • Drizzle of soy sauce
  • 1/2 chilli flakes (optional)
  • 1 packet of microwave rice

Preparation

  1. Crush the garlic and ginger and finely slice the spring onion and carrot.

  2. Drizzle oil in a wok and add the ingredients above, saving a tiny bit of spring onion for garnish, and cook for 2-3 minutes. Be careful not to burn the garlic; add a splash of water if needed.

  3. Add the Chinese five spice and chilli flakes and crumble in the tofu. Cook for a further 2-3 minutes.

  4. Add the peas and the microwave rice to the pan and drizzle with soy sauce. Cook until the rice is starting to crisp on the bottom.

  5. Serve and garnish with the remaining spring onion.

Notes

  1. This recipe is simple and quick to prepare. It can be served with vegan Chinese ribs for extra flavor.
