Vegan Zucchini Fritters Danish Style

Ingredients

  • 2 tablespoons flax seeds
  • 7 tablespoons water
  • 600g zucchini
  • 1/2 onion
  • 2 cloves garlic
  • 7 tablespoons oats
  • 7 tablespoons breadcrumbs
  • 1 teaspoon cumin
  • Salt and pepper

Preparation

  1. Mix flax seeds and water and set aside

  2. Wash and shred the zucchini and drain all water

  3. Mix the shredded zucchini with chopped garlic, onion, oats, breadcrumbs, cumin, salt and pepper

  4. Pour in the flax seed mixture and mix well

  5. Let the mixture rest for 10-15 minutes in the refrigerator

  6. Form the dough into small fritters with your hands

  7. Cook the fritters in rapeseed oil in a pan for 4-5 minutes on each side until crispy and golden

Serving suggestions

  1. Serve the fritters with salads, vegetables, baked potatoes, or pitas
