Spiced Brown Chicken Korma

Ingredients

  • 1 full chicken
  • 2 onions
  • 1/4 cup oil
  • 1/2 cup water
  • Salt to taste
  • 1 tablespoon chicken spice
  • 1 tablespoon cumin powder
  • 1 tablespoon coriander powder
  • 1 tablespoon garam masala
  • 1 tablespoon red chilli powder
  • 1 teaspoon turmeric powder
  • 1 tablespoon crushed green chili
  • 2 tablespoons ginger garlic paste
  • 2 cardamom pods
  • 2 cloves
  • 2 peppercorns
  • 2 cinnamon sticks
  • Fresh coriander for garnish

Preparation

  1. Cut and wash the chicken.

  2. Marinate in the spices and keep aside for 30 minutes.

  3. Slice the onions.

  4. Add oil to a pot.

  5. Once heated, add the onions and braise until glossy.

  6. Add the whole spices and braise.

  7. Add the remaining ginger garlic paste and braise until the raw smell goes away.

  8. Add the chicken and allow the water to burn out.

  9. Fry the chicken for 3 to 5 minutes.

  10. Add water, cover, and cook on low heat for 15 minutes.

  11. Once cooked, allow excess water to burn out.

  12. Garnish with fresh coriander and serve.
