Spiced Potato and Peanut Fry

Ingredients

  • 2 tbsp ghee
  • 1/2 cup peanuts
  • 1 tsp cumin seeds
  • 1 tbsp chopped green chilli
  • 4-5 boiled potatoes
  • salt to taste
  • 1/2 tsp black pepper
  • chopped coriander to taste
  • 2 tbsp lemon juice

Preparation

  1. In a kadhai, heat 1 tablespoon ghee and add 1/2 cup peanuts, fry until golden brown, and set aside

  2. In the same kadhai, add another 1 tablespoon ghee, then add 1 teaspoon cumin seeds and 1 tablespoon chopped green chilli, sauté for a few seconds

  3. Add 4-5 boiled and diced potatoes, cook on medium heat for 5-8 minutes until golden brown and crispy

  4. Add salt, 1/2 teaspoon black pepper, and mix well

  5. Add chopped coriander, 2 tablespoons lemon juice, and the roasted peanuts, then cook for 2-3 minutes

Serving suggestions

  1. Serve hot with curd and coriander-mint chutney
