Spiced Potato and Peanut Fry
Ingredients
- 2 tbsp ghee
- 1/2 cup peanuts
- 1 tsp cumin seeds
- 1 tbsp chopped green chilli
- 4-5 boiled potatoes
- salt to taste
- 1/2 tsp black pepper
- chopped coriander to taste
- 2 tbsp lemon juice
Preparation
In a kadhai, heat 1 tablespoon ghee and add 1/2 cup peanuts, fry until golden brown, and set aside
In the same kadhai, add another 1 tablespoon ghee, then add 1 teaspoon cumin seeds and 1 tablespoon chopped green chilli, sauté for a few seconds
Add 4-5 boiled and diced potatoes, cook on medium heat for 5-8 minutes until golden brown and crispy
Add salt, 1/2 teaspoon black pepper, and mix well
Add chopped coriander, 2 tablespoons lemon juice, and the roasted peanuts, then cook for 2-3 minutes
Serving suggestions
Serve hot with curd and coriander-mint chutney
