Indonesian Grilled Beef Ribs

Ingredients

  • 1 kg beef ribs
  • 3 bay leaves
  • 2 stalks lemongrass
  • 100 g palm sugar
  • 6 tbsp sweet soy sauce
  • salt
  • 2 liters water

Ground spices

  • 20 shallots
  • 8 cloves garlic
  • 1 tbsp coriander
  • 5 candlenuts
  • 3 cm galangal
  • 2 cm ginger

Preparation

  1. Boil the ribs with water, ground spices, lemongrass, bay leaves, palm sugar, soy sauce, and salt until tender and liquid reduces. Remove.

  2. Grill the ribs briefly on a Teflon pan while basting with the remaining sauce. Remove.

  3. Serve with fresh vegetables and chili sauce.

Tips

  1. Can also grill over open flame for better flavor.
