Miso Glazed Salmon or Eggplant

Ingredients

  • 8 boneless salmon fillets or 1 large aubergine
  • 3/4 cup sweet white miso
  • 2 tablespoons rice mirin
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 teaspoon sesame seeds
  • 1 lime, thinly sliced
  • Rice and vegetables for serving

Preparation

  1. Preheat the oven to 180C and line a baking tray with parchment paper

  2. If making the aubergine version, cut the aubergine in half, score in a cross cross pattern, brush with a little sesame oil, and bake for 40 minutes

  3. In a small bowl mix the miso, mirin, soy sauce, honey, and sesame oil

  4. Pat dry the salmon filets and place on the baking tray. Spoon over the paste

  5. Put half a slice of lime on each piece and sprinkle on some sesame seeds

  6. Bake for around 12-15 minutes depending on the thickness of your salmon and how well done you like it

  7. Serve with rice or noodles and vegetables

Notes

  1. This dish is quick and easy to make, perfect for busy days

  2. Can be prepared with salmon or aubergine to accommodate dietary preferences, as both work well with the miso glaze
