Granola-Crusted Honey-Mustard Salmon

Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 2 tablespoons Dijon mustard
  • 1 garlic clove, grated
  • 1 teaspoon fresh thyme or rosemary, roughly chopped
  • 3/4 cup Cascadian Farm Oats and Honey Granola
  • 1 pound center-cut skinless salmon filet
  • Flaky sea salt, for finishing
  • Fresh lemon wedges, for serving

Preparation

  1. Preheat oven to 400F degrees. Line a baking dish with a piece of parchment paper and drizzle lightly with olive oil.

  2. Pulse Cascadian Farm Oats and Honey Granola a few times in a food processor to break up any larger clusters.

  3. Combine olive oil, honey, Dijon mustard, grated garlic, and chopped thyme or rosemary in a small bowl. Lay salmon into prepared baking dish, then spoon the honey mustard mixture and spread evenly overtop. Sprinkle the granola over the honey mustard, pressing lightly to adhere. Drizzle with a little more olive oil.

  4. Bake salmon for 20 minutes for medium, or 25 minutes for completely cooked through.

  5. Serve salmon with a little flaky sea salt and squeeze of fresh lemon.
