Easy Spicy Sesame Noodles

Ingredients

  • Any noodles of choice
  • Splash of sesame oil for tossing

Sauce components

  • 2-4 cloves minced garlic
  • Knob of finely grated ginger
  • 1 tablespoon gochugaru or crushed red chili flakes
  • Handful of sliced scallions
  • 2-3 teaspoons sesame seeds
  • 1.5-2 tablespoons hot sesame oil
  • 4 tablespoons light soy sauce
  • 1.5 tablespoons rice vinegar or lime juice
  • 1.5-2 tablespoons sesame paste or tahini
  • 1 tablespoon peanut butter
  • Optional: hot sauce or chili oil
  • Optional: 1-2 tablespoons black tea
  • Splash of starchy noodle water
  • Optional: dash of brown sugar or honey
  • For garnish: sliced cucumbers, additional scallions, sesame seeds

Preparation

  1. Cook any noodles of choice, drain and reserve the starchy cooking water. Immediately toss the noodles with a splash of sesame oil to prevent clumping and set aside.

  2. In a heatproof bowl, mix together minced garlic, finely grated ginger, gochugaru or chili flakes, sliced scallions, and sesame seeds.

  3. Pour 1.5-2 tablespoons hot sesame oil on top and let it sizzle. Mix well, then stir in light soy sauce, rice vinegar or lime juice, sesame paste or tahini, peanut butter, optional hot sauce or chili oil, and optional black tea.

  4. Stir well, then add a splash of the reserved starchy noodle water and a dash of brown sugar or honey if desired. Mix until the sauce has a smooth consistency.

  5. Pour the sauce over the noodles and serve cold, garnished with sliced cucumbers, scallions, and sesame seeds.

Tips

  1. Adjust the sauce according to preference, such as adding more sesame or peanut butter for a nuttier flavor.
