Olive and Feta Side Dish
Ingredients
- 1/2 cup green olives
- 1/2 cup black olives
- 1/2 tsp dried mint
- 1/2 tsp pul biber or chili flakes
- Generous glug of extra virgin olive oil
- 1 garlic clove
- Small piece of feta cheese
- Parsley or coriander (optional, for garnish)
Preparation
Combine the green and black olives, dried mint, pul biber or chili flakes, olive oil, and chopped garlic. Mix together and adjust to taste with more oil, herbs, or spice.
Crumble the feta over the top and add chopped parsley or coriander before serving.
Tips
Make this ahead of time and let the olives marinate; the longer, the better. Add feta and garnish just before serving.
For better taste, mix the feta with the other ingredients, though it may not look as appealing.
