Baked Chicken Fajita Casserole

Ingredients

Chicken mixture

  • 4 pieces chicken fillet
  • 2 tablespoons olive oil
  • 2 medium onions, sliced
  • 4 cloves garlic, crushed
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 1 teaspoon coriander
  • 1 teaspoon salt
  • 1 large green bell pepper, chopped
  • 1 large red bell pepper, chopped

Potatoes

  • 4 large potatoes
  • 1/4 cup butter
  • 1 cup milk
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons chopped parsley

Preparation

  1. Heat the oven to 180 degrees Celsius, prepare a medium baking dish, grease it with oil, and set it aside.

  2. Cut the chicken into small finger-sized pieces.

  3. In a skillet, heat the oil, add the chicken and stir until golden brown, then add the onion and garlic and stir until wilted, add the spices and continue stirring, then add the peppers and stir.

  4. Place the chicken mixture in the baking dish in an even layer.

  5. Boil the potatoes, mash them, and add butter, milk, paprika, salt, and pepper.

  6. Spread the mashed potatoes over the chicken layer.

  7. Sprinkle the shredded cheese over the top.

  8. Bake in the oven until golden brown, then sprinkle with chopped parsley and serve.
