Spicy Bean Chilli Quesadillas

Ingredients

  • Tortilla bread
  • Black beans
  • Onion
  • Bell pepper
  • Oil
  • Smoked paprika
  • Chili
  • Salt
  • Pepper
  • Vegan mince (optional)
  • Crushed tomatoes
  • Avocado
  • Tomatoes
  • Sweet corn
  • Vegan cheese

Preparation

  1. Choose the form or tortilla bread you enjoy the most.

  2. Fry black beans, onion, and bell pepper in some oil with smoked paprika, chili, salt, and pepper; optionally add vegan mince, then add crushed tomatoes to make a sauce.

  3. Make the quesadillas by adding the bean mixture along with avocado, tomatoes, sweet corn, and vegan cheese to one half of the tortilla, fold it over, and cut into triangles.

  4. Fry the quesadillas in a little oil or in a non-stick pan.

  5. Eat and enjoy.

Tips

  1. Do not add too much crushed tomatoes as that can make the bread soggy.
