Roasted Pointed Cabbage with Airfried Potatoes

Ingredients

  • Pointed cabbage
  • Potatoes
  • Oil
  • Salt
  • Pepper
  • Olive oil or vegan margarine
  • Sea salt
  • Black pepper
  • Smoked paprika
  • Garlic powder
  • Chili flakes

Preparation

Potatoes

  1. Wash the potatoes

  2. Peel them

  3. Cut into cubes or wedges

  4. Drizzle over some oil, salt and pepper

  5. Cook in an air fryer at 200°C for 25 minutes or in an oven at 220°C for 25-30 minutes

Cabbage

  1. Peel off the first layer and wash the cabbage

  2. Cut into 4 pieces

  3. Place in a baking tray

  4. Drizzle over either some olive oil or vegan margarine, lots of sea salt, black pepper, some smoked paprika, garlic powder and chili flakes

  5. Bake in the oven at 200°C for around 30-35 minutes, noting that time can vary depending on the size of the cabbage slices

Tips

  1. Combine with a protein source such as seitan, tofu, or tempeh for better nutrition

  2. Add a sauce or dressing like tahini, sriracha-mayonnaise, or a spicy lime-chilli glaze for extra flavor, though it's optional

  3. This dish can also be prepared on the grill by wrapping each cabbage piece in individual foil
