Salmon Burgers in Potato Buns
Ingredients
- 500g skinless salmon fillet
- 1 tablespoon extra virgin olive oil
- 1 tablespoon finely chopped fresh coriander
- 1 tablespoon finely chopped fresh parsley
- 1 tablespoon finely chopped fresh mint
- 1 teaspoon chili powder
- 1 teaspoon lime juice
- Salt, to taste
- Pepper, to taste
Preparation
Cut the salmon into 1cm pieces on a cutting board, then push half of it to one side. Chop the remaining salmon until it is very fine, almost like a puree.
Add olive oil, chili powder, parsley, coriander, mint, and lime juice. Then add back the larger pieces and season with sea salt and black pepper. Divide into 4 portions and shape into 2cm thick patties.
Place a large skillet over medium-high heat with 1 tablespoon of olive oil. Fry the patties for 2 minutes on each side, or until nicely golden.
Serve as salmon burgers in bread or with any accompaniment such as potatoes, mashed potatoes, root vegetables, bulgur, or salad.
Serving suggestions
Enjoy with sriracha mayo, salad, cherry tomatoes, pickled red onion, mango, scallions, and sweet chili sauce in potato buns.
