Crispy Fried Egg Salad
Ingredients
- eggs
- fish sauce
- lime juice
- sugar
- lemongrass
- chili
- coriander
Optional additions
- salted and dried fried baby anchovies (dilis)
Preparation
Fry the eggs in oil until crispy on the outside but still runny in the center.
Mix fish sauce, lime juice, sugar, lemongrass, chili, and coriander to prepare the dressing.
Combine the fried eggs with the dressing and add optional ingredients if desired.
Serve immediately.
