Apple and Walnut Filled Cookies
Ingredients
- 250 g room temperature butter
- 1 cup yogurt
- half cup vegetable oil
- 1 packet baking powder
- 2 tablespoons powdered sugar (optional)
- a pinch of salt
- 3 to 3.5 cups flour (add controlled, using 200ml cup measure)
Filling
- 4 apples
- 1 cup sugar
- 1 vanilla
- 1 teaspoon cinnamon
- half cup coarsely chopped walnuts
Preparation
First, prepare the apple filling by peeling and grating the apples, then cook them in a pan.
Add sugar and vanilla to the apples and continue cooking.
When nearly done, add walnuts and cinnamon, and cook until the liquid evaporates. Let it cool.
For the dough, mix all the dough ingredients in a deep bowl and knead until you get a soft, non-sticky dough.
Divide the dough into three parts, roll each out with a rolling pin, and cut into circles using a glass or desired shape.
Place a portion of the apple filling in the center of each circle and fold the edges to meet in the middle.
Arrange on a baking sheet lined with parchment paper.
Bake in a preheated oven at 200°C for 20-25 minutes until lightly browned.
After cooling, dust with powdered sugar before serving.
Tips
If not consuming the same day, sprinkle powdered sugar on the second day to prevent softening.
