Freezer-Friendly Turkish Vegetable Stew

Ingredients

  • 1.5 kg fresh green beans
  • 1 kg okra
  • 1 kg zucchini
  • 1 kg eggplant
  • 1 kg tomatoes
  • 0.5 kg carrots
  • 0.5 kg red bell peppers
  • 0.5 kg sweet peppers
  • 1 kg cranberry beans
  • 1 large bowl garlic

Additional

  • Onion
  • Tomato paste
  • Potatoes
  • Salt
  • Black pepper
  • Bay leaf
  • Water

Preparation

Freezing

  1. Cut the tops of the okra and wash them

  2. Chop the eggplants coarsely and put them in salted water

  3. Chop the zucchini and peppers coarsely

  4. Slice the carrots

  5. Trim and cut the green beans

  6. Shell the cranberry beans

  7. Mix all ingredients in a large tray

  8. Fill into freezer bags

Cooking

  1. Remove from freezer without thawing and add directly to the pot

  2. Sauté onion and tomato paste in pre-cooked chicken or meat

  3. Add the frozen vegetables to the pot

  4. Add desired amount of potatoes, salt, black pepper, optional bay leaf, and a little water, then cook until done

Tips

  1. No need to thaw the vegetables before cooking for quick preparation

  2. Can be made vegetarian by omitting meat or kept with pre-cooked meat for added flavor
