Oven-Baked Ribs with Vegetables

Ingredients

  • 1 kg ribs
  • 2 medium potatoes, cubed
  • 3 medium zucchini, cubed
  • 3 medium carrots, cubed
  • 2 medium onions, cubed
  • 1 cup mushrooms, sliced
  • 2 medium tomatoes, cubed
  • 1 cup peas
  • 1 cup okra
  • 1 cup green beans
  • 1 tablespoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon mixed spices
  • 2 tablespoons tomato paste
  • 2 tablespoons lemon juice
  • 3 tablespoons oil
  • 2 cups water or broth

Preparation

  1. Preheat the oven to 180°C and prepare a large baking dish.

  2. In a large skillet, heat the oil, add the ribs and brown until golden, then place them in the baking dish.

  3. Add the vegetables and spices to the baking dish and mix well. In a deep bowl, combine the broth or water with the tomato paste and lemon juice, stir, and pour over the vegetables.

  4. Cover the dish and bake in the oven for about 45 minutes. Then, remove the cover and bake for an additional 15 minutes to brown.
