Traditional Turkish Delight Candy
Ingredients
- 2 cups sugar
- 2 cups water
- 1/4 teaspoon cream of tartar
- 1/4 teaspoon lemon juice
- 1 cup starch
- 1 cup water
- 1 teaspoon rose water
- 1 teaspoon orange blossom water
- 3 ground mastic
- 1/2 cup sugar
- 1 tablespoon butter
For shaping
- Starch
For decoration
- Food coloring as desired
Preparation
Prepare an 8-inch square cake pan by lining it with plastic wrap and dusting generously with starch; set aside.
In a saucepan, combine sugar, water, lemon juice, and cream of tartar. Bring to a boil over medium heat, then reduce heat and simmer gently for 3 minutes.
In a separate bowl, mix starch and water until well combined.
Slowly pour the starch mixture into the syrup while stirring continuously with a silicone spoon until the mixture thickens.
Add orange blossom water, rose water, ground mastic, sugar, and food coloring if desired. Continue stirring until the sugar dissolves and the mixture becomes thick and transparent.
Add butter and stir until it melts. Continue cooking on low heat with constant stirring for about 15 minutes until the mixture is cohesive and pourable.
Pour the mixture into the prepared pan, press to even it out, and sprinkle generously with starch.
Allow it to set at room temperature for several hours. Cut into pieces as desired and dust with more starch.
